Research & Teaching Activities

A) Research Interests:

  • Exploring the health effects of bioactive milk components and probiotics by using different animal models (i.e. obesity, fatty liver, hypertension and diabetes).
  • Antioxidant and angiotensin converting enzymes inhibitory activities of bioactive milk peptides.
  • Influence of cross-linking by Transglutaminase on different characteristics and health effects of milk and Dairy products.

B) Teaching:

Teaching different courses for undergraduate and postgraduate programs in the field of human nutrition and food & dairy sciences.

Awards & Scholarships

  • A Fulbright scholar grant for 9 months at The Ohio State University, USA for doing a research project entitled “Potential effect of whey proteins on fatty liver and insulin resistance as important metabolic syndrome components” Sep, 2012-June, 2013.
  • International publication award of Cairo University, 2012.
  • “Egyptian Society of Dairy Science Award for young researchers”, 2012.
  • DAAD Post-doctor Scholarship (GERSS program) in Germany for doing a research project entitled “Production and health effects of β-interferon enriched yoghurt” May-Aug, 2010.
  • Awarded a Ph.D. Scholarship (Scientific chsnnel between Cairo Univ. and Kyushu Univ. in Japan funded by the Egyptian Government for two years on June, 2006.
