Introduction
Dr. Tarek Abedelmaksoud is a researcher in Food Science, with a specialization in the processing of fruits, vegetables, and their by-products, as well as enzyme technology. His research is dedicated to advancing technological innovations that ensure the quality and safety of food, with a focus on both thermal and emerging non-thermal technologies. Additionally, his work explores the impact of processing and storage on the stability of food products and their constituents.
